Day 1: Rome – Montepulciano to Florence
Arrival at international airport Rome Fiumicino. Welcome by your tour escort.
Transfer by private Mercedes-Benz Minivan/Sedan to the hotel located in Certaldo.
Stop on route in Montepulciano for wine tasting and lunch not included at top winery of Nobile di Montepulciano & Brunello di Montalcino (suggested Cantine Mozart bio-sound Winery). Rest of day at leisure. (B)
Day 2: Bike tour to Siena & Chianti Winery
Today we explore the heart of Tuscany to Siena and Chianti Classico.
In the morning Chianti Classico bike tour:
Meet your driver at your hotel and drive on the “Strada del Vino” (road of the wine), the famous Chiantigiana, to Greve in Chianti. You will be driving in a unique landscape surrounded by vineyards, olive trees and oak forests.

Day 3: Thursday Tuscan Countryside walk Florence
This morning discover the natural landscape of the Tuscan countryside with gentle “Amiatina” donkeys, a local donkey breed that is native to the region. This slow tour is the perfect antidote to our fast-paced world, and you’ll feel as if you’re traveling back in time. Adults can walk alongside the donkey while children and anyone under 50 kilos can ride on the back of the anima.
Continue to Florence our city tour begins at the majestic Piazza del Duomo where we will visit the famous Cathedral, Giotto’s Bell Tower, and the Baptistery with Ghiberti’s splendid bronze “Gates of Paradise.” Then, we will make our way to visit to the renowned Academy of Fine Arts, where Michelangelo’s breathtaking David is displayed. The tour ends at Santa Croce square to visit. The remainder of the day is yours to savor the Tuscan capital at your own leisure. (B)
Day 4: Friday Cooking class – San Gimignano – Tuscany
Late morning enjoy a cooking class hand-on session with organic local products, wine & olive oil tastings.
In the afternoon visit San Gimignano, stroll the old center “Medieval Manhattan” famous for the fascinating architecture and towers that offer amazing views of the city and the surrounding valley.
Tonight enjoy dinner out on your own. (B, W, L)
Day 5: Saturday – Florence – Pisa – Colonnata – Framura – LIGURIA Region
Today, after breakfast transfer to Framura with stop on route in Pisa for a visit at the famous leaning tower that stands proudly on Piazza Campo dei Miracoli (Miracles Field).
Then move to the village area of Colonnata, learn how the most famous Italian Lard is made, conclude with a nice lunch buffet of local products.
Arrival and check-in, enjoy a walk along the beautiful slopes and terraces of the Riviera.
Tonight we suggest you to enjoy a very special cooking class to learn how to make trofie pasta and the original Basil Pesto. Dinner included. (B, L, D)
Day 6: Sunday – Cinque Terre walking paths
Enjoy in the morning visit at local bakery to get the best organic focaccia Ligure.
Move to Manarola for your walking/hiking experience along the coast of Cinque Terre (Easy/Medium difficult) to Corniglia through terraces of vineyards, forest of pine trees and amazing cliffs. Boat or train to Monterosso al mare, time for swimming and lunch.
Late afternoon transfer back to your Hotel in Framura. Rest of the day at leisure. (B)
Day 7: Monday – Framura to Parma to Verona to Brenzone su Garda on Lake Garda
Check-out and move to Parma, the home of Parmigiano Reggiano cheese and the cured Prosciutto di Parma. Today you will explore the so called “food valley of Italy”, you will visit a Parmiggiano cheese factory to learn how to make cheese followed by a tasting of 3 different agings 12-24-36 months.
Then move to Modena, the capital of balsamic Traditional Vinegar and Lambrusco wine. Experience a tasting session at one of the oldest balsamic vinegar cellars followed by a gourmet lunch at local restaurant, try the best
Tagliatelle alla Bolognese and Tortelli stuffed with pumpkin, Parmigiano and balsamic vinegar.
The afternoon continues to Lake Garda with on route stop in Verona for a quick tour of the city. City Tour of Verona, visit the Arena, a Roman Amphitheater.

Day 8: Tuesday – Brenzone su Garda
Move to Valpolicella, production area of best Italian wine, the Amarone.
Tasting and lunch at local farm estate (not included). Sunset sailing ride along the lake with an aperitif on board. The Veliero San Nicolò accompanies you on a unique and fascinating experience:
Sunset Cruise, a combination of the pleasure of enjoying an aperitif at sunset when the scarlet sun plunges into the shining waters of the lake and the charm of sailing on the latest vintage ketch sailing on Lake Garda.

Electricity is produced by a local photovoltaic power station, which covers 60% of our annual consumption, and the rest is covered by renewable sources. Our heating and air conditioning are generated by a heat pump and a boiler fueled by pellets (compressed wood) integrates the heating during the winter months. Solar panels produce 100% of our hot water.
All of this ensures Paluffo is 100% free of greenhouse gas emissions.
We collect rainwater from the roofs for garden irrigation and regenerate wastewater through phyto-purification.
90% of our lightbulbs are LED and all our appliances, including ovens, stove tops, dishwashers and refrigerators, are certified in the A or A+ energy category.
We hired artisans to carry out restoration works on the estate and local Tuscan materials were used throughout. Cypress, chestnut and acacia trees were used for wooden features, terracotta tiles were used to replace worn floor and travertine and Carrara marble were used in the bathrooms.
The latex mattresses and pillows are produced locally, and all bathroom products are certified vegan and organic. The swimming pool is naturally purified by aquatic plants and flowers without the use of chlorine or other chemical components.
Paluffo is set upon six hectares of farmland and has organic olive groves and vineyards, as well as a many fruit trees and herb plants. Peaches, apples, pears and blackberries are grown on the property and Tuscan wildlife can be spotted throughout in the countryside, including deer, dragonflies, wild boars, foxes, porcupines and wolves.
In 2014, Paluffo won the Green Travel Award from the Borsa Internazionale del Turismo (BIT), an annual international tourism event, for being a Green Accommodation.
In 2019, Paluffo’s environmental commitment was recognized by the Milan Chamber of Commerce with the “Ambrogino d’Oro” award.
